The Shun Premier Tim Mälzer Minamo blade is made of extremely hard VG-MAX steel (61 (±1) HRC) at its core, encased in 32 layers of Damascus steel. The blade's high-gloss finish is complemented by a Damascus grain. A hybrid of a santoku and chef's knife, the blade's special shape is particularly well-suited for precise chopping. The blades are double-edged.
The black-colored pakkawood handle, thanks to its symmetrical shape, is suitable for both left- and right-handed users. The slight curve on the underside of the handle makes it comfortable to hold. The fully forged tang ensures a perfect balance between blade and handle.

Clean
Rinse the knives with hot water before first use. Protect your knives by cleaning them immediately after use (with a mild detergent). Then rinse the blade with clean water and dry it thoroughly with a soft cloth. Rinse your knives immediately, especially after cutting acidic foods.
For your own protection, always wipe the knives from the back of the knife to the cutting edge with a soft dishcloth or towel.
Knives should never be put in the dishwasher. Always wash them by hand to protect the material and maintain their sharpness.
Sharpening & Care
Be especially careful not to leave knives with natural wood handles in water for too long. For extra care, oil the handles and blades of your knives from time to time with neutral vegetable or camellia oil.
It is also recommended to have the knives professionally sharpened from time to time to eliminate signs of wear on the cutting edge and to ensure lasting sharpness.
Due to the high hardness of our knives, sharpening steels are completely unsuitable. From traditional whetstones to complete electric sharpening systems, our product range offers the right tool for each of our knives.
Storage
When storing knives, make sure the cutting edge does not come into contact with other metal objects. This will prevent damage to the blade. It's best to store knives in a knife block, a wooden drawer insert, a wooden magnetic strip, or a blade protector in the drawer.
