The rising steam condenses on the cooler lid and drips back onto the food. This enables gentle, flavorful, and nutrient-rich cooking. The tagine – a traditional oriental stew – owes its name to the special vessel in which everything is cooked together. Its typical feature is the conical, domed lid over a shallow cooking dish. The upper part is further away from the heat and remains cooler. This allows the rising steam, which condenses on the lid, to condense and drip back onto the food. This allows for slow, gentle cooking in its own juices without the need for a lot of liquid. The moist climate inside makes meat wonderfully tender and protects delicate food, while also locking in valuable flavors and nutrients. We have taken this cooking method as our model and developed a new tagine, traditional in shape but made with materials that meet modern cooking requirements. Originally made from clay from head to toe, the base is now made of enamelled cast iron and the coloured lid is made of robust stoneware, making the tagine an eye-catcher on the stove and on the table.
