The Kai Shun paring knife is the perfect choice for all delicate prep work in the kitchen. With its short, curved blade – in a classic bird's beak shape – it's ideal for peeling, slicing, cleaning, and garnishing fruits and vegetables. It also provides precise support when preparing meat, for example, trimming fat and sinew or lard.
The 6 cm long blade is made of 32 layers of high-quality Damascus steel with an extremely hard VG MAX core. With a hardness of 61 ±1 HRC, the knife offers exceptionally high edge retention. Thanks to the convex grind and hand-ground edge, the knife glides effortlessly through the material being cut – even for the most delicate tasks.
The symmetrically shaped handle made of fine pakkawood fits comfortably and securely in the hand – for both right- and left-handed users. Weighing just 59 g and with a blade thickness of 2 mm, the knife is particularly light, maneuverable, and comfortable to handle. A true asset to any knife block!
