The special feature of the KAI Shun Nagare slicing knife is its dual-core blade, which is manufactured using an innovative forging process. This slicing knife uses the dual-core process to combine two types of steel, VG-10 and VG-2, into a 72-layer Damascus steel. The combination of the flexible and durable VG-2 steel and the particularly hard VG-10 steel results in a Rockwell hardness of 61±1. In addition to the distinctive appearance of the 23 cm long, double-edged blade, the slicing knife offers long-lasting edge retention and excellent sharpness.
The ergonomically shaped handle, with its soft, rounded lines, fits comfortably in the hand. The riveted handle scales made of gray-black mottled pakkawood (Japanese pine), a treated and particularly durable wood veneer, lend the carving knife warmth and quality.
The KAI Shun Nagare ham knife is not dishwasher safe.
