The KAI Shun Premier Tim Mälzer Tantō is an exceptional chef's knife for precise cutting with style and character. With its distinctive blade shape and an impressive length of 25.5 cm , it is ideal for precise, powerful cuts – whether meat, fish, or vegetables.
The core of the blade is made of high-quality VG-MAX steel , encased in 32 layers of Damascus steel . This elaborate construction gives the cutting edge an exceptional combination of hardness and elasticity. The double-bevel grind ensures precise cutting and clean results. The characteristic hammered finish ("Tsuchime") not only serves as a visual highlight but also reduces food sticking thanks to tiny air pockets – a real advantage in everyday use.
The medium-brown handle, crafted from elegant pakkawood, sits comfortably in the hand thanks to its symmetrical shape, offering maximum comfort for both left- and right-handed users. Clean
Rinse the knife with hot water before first use. After each use, clean it with mild dish soap, rinse with clean water, and dry thoroughly with a soft cloth. Immediate cleaning is especially recommended after cutting acidic foods to protect the blade.
Always wipe the blade from the back towards the edge to avoid injuries. Never put the knife in the dishwasher – hand washing is the best way to maintain its longevity and sharpness.
Sharpening & Maintenance
Never leave knives with wooden handles in water for extended periods. Regularly treat the handle with camellia oil or a neutral vegetable oil to preserve its natural beauty. To maintain the blade's sharpness over time, the knife should be regularly honed with a fine whetstone . Sharpening steels are unsuitable due to the high hardness of the steel.
Storage
Store the knife so that the blade does not come into contact with other metal objects. Ideally, store it in a knife block , a wooden insert , on a magnetic strip , or in a blade guard in a drawer. This will keep the blade protected and sharp.
