Kai Kiritsuke Vegetable Knife 9 cm – Shun Series

The Kai Kiritsuke vegetable knife from the Shun series is a versatile cutting tool with a distinctive, tapered blade. This distinctive shape allows for precise peeling, slicing, cleaning, and garnishing of fruit and vegetables. Thanks to the special notch at the rear end of the blade, the knife sits particularly securely and comfortably in the hand – ideal for delicate work and extended use.

The blade consists of an extremely hard VG MAX steel core with a hardness of 61 ±1 HRC, surrounded by 32 layers of high-quality Damascus steel. This combination gives the blade a perfect balance of hardness, elasticity, and stability – for clean and controlled cuts without effort. The double-edged grind ensures optimal cutting performance – regardless of whether you are right- or left-handed.

The handle is made of durable, moisture-resistant pakka wood in a classic chestnut shape. The soft edge on the right side provides an ergonomic, non-slip grip. The full tang ensures a balanced relationship between blade and handle—for maximum control with every cut.

Care instructions

Rinse the knife with hot water immediately after use and dry it thoroughly with a soft cloth. Avoid harsh cleaning agents and do not put the knife in the dishwasher. Clean it especially quickly after cutting acidic foods. Occasionally treat the wooden handle with a little vegetable oil.

Storage tip

Store your knife in a protected place, away from other metal objects. Knife blocks, wooden drawer inserts, magnetic strips, or blade protectors are ideal.
