Kai Kaname – Kiritsuke 19.5 cm (VGXeos steel)

The Kai Kaname Kiritsuke combines modern forging with traditional Japanese blade geometry, offering you a cutting tool of the highest quality. With its pronounced tip and long, flat cutting surface, this knife is particularly well-suited for precise cutting techniques and delicate preparations.

At its core, the blade is made of advanced VGXeos steel, which, with a hardness of 60–62 (±1) HRC, offers exceptionally long-lasting sharpness. This is encased in two layers of stainless steel, creating a three-layer blade construction that ensures stability and a thin, finely ground edge. The result: minimal friction when cutting and a particularly smooth glide through the material.

The handle, made of premium pakkawood, is ergonomically shaped to fit comfortably in your hand and offers a secure grip even during longer cooking sessions. The balanced ratio of blade to handle weight supports precise, controlled work – regardless of whether you're right- or left-handed.
