The Kai Shun ham knife DM-0735 was specially developed for delicate carving and wafer-thin slicing. With its extra-long, flexible blade made of AUS8A stainless steel, it's the ideal tool for professionals and ambitious home cooks who value precision, ergonomics, and high-quality craftsmanship .

- Blade length: 30.5 cm – ideal for large pieces of meat, ham, fish, cheese, fruit & vegetables
- Blade material: flexible AUS8A steel, stainless, hardness 59 ±1 HRC
- Handle: ergonomically shaped from laminated pakkawood in traditional chestnut shape
- Grinding: double-sided for even cuts
- Continuous tang: for optimal stability, balance & control
- Processing: very high quality, durable & moisture-resistant
Ideal for:
- Fine carving of roasts, ham, fish & cheese
- Cut wafer-thin slices with minimal effort
- Processing large fruits and vegetables with clean cuts
Care instructions:
- After each use, clean under lukewarm water and dry with a soft cotton cloth
- Occasionally care for the handle with neutral vegetable oil (e.g. linseed oil or coconut oil)
- Never put it in the dishwasher! The salt and heat will damage the blade and handle.
- Only use soft cutting surfaces such as wooden or plastic boards
- Knife blocks, wooden drawer inserts or magnetic wall strips are suitable for storage
